The New York Times "Recipes for Health" series

The New York Times has a Recipes for Health series written by Martha Rose Shulman. Last week she shared a recipe for Spicy Carrot, Parsnip and Potato Latkes. I am fond of latkes which are potato pancakes traditionally eaten during Hanukkah. This dish looks absolutely delicious (Figure 1).

At the end of her recipes Ms Shulman provides nutritional information which is informative:
Nutritional information per serving: 220 calories; 11 grams fat; 1 gram saturated fat; 3 grams polyunsaturated fat; 7 grams monounsaturated fat; 62 milligrams cholesterol; 25 grams carbohydrates; 4 grams dietary fiber; 150 milligrams sodium (does not include salt to taste); 5 grams protein
